Cranberry-Almond Irish Soda Bread

Saint Patrick’s Day is right around the bend, how will you celebrate? We happen to live in a city that takes this holiday seriously – I’m talking a huge parade, green beer, leprechaun pub crawls, hell, even our local Kosher bakery serves green bagels in honor of Saint Patrick! In a city with myriad ways to celebrate this holiday, I choose baking.

I first had Irish Soda Bread while on a trip to Ireland when I was young and it made an indelible impression on this foodie. I like to think of Soda Bread as a giant fluffy scone that goes best with Kerrygold butter (god’s gift to Ireland) and a hot cup of tea…

2 cups of all-purpose while flour
1/2 white sugar
1/2 teaspoon baking soda
1 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 & 1/2 pint sour cream
1/2 cup dried cranberries
1/2 cup sliced almonds

1.) Pre-heat oven to 325º
2.) Mix together the flour, sugar, baking soda, baking powder and salt.
3.) Add in the eggs and sour cream, mix well.

4.) Add the cranberries and almonds to mixture

5.)  Put the mixture in a circle or square mound onto a greased baking sheet.

6.) Cook for about an hour or until golden brown.
