White Bean Garlic Soup

A good recipe for a cold night when you are low on funds and energy – I whipped up this soup in 30 minutes using only the ingredients in my cabinet.

2 cans white beans, any variety (I used 1 can butter bean and 1 can cannellini beans)
2 shallots
1 onion
6 + garlic cloves
2.5 cups vegetable broth
1/3 cup wine
Tsp Tarragon
Tsp Herbs de Provence
1/2 tsp Rosemary
1/2 tsp dill
Salt and pepper to taste Olive Oil
1/8th of a stick of butter

1.) In the medium sauce pan, saute shallots, garlic, and onions in olive oil on medium-high heat.
2.) When they start to brown and soften add 2 cans beans, salt, and pepper.
3.) Add 1/8 stick butter.
4.) Mix together until butter melts.
5.) Add spices – tarragon, herbs de Provence, rosemary, and dill.
6.) Add in broth and let cook on medium for 5-10 minutes.
7.) Add wine and turn off heat.
8.) Blend ingredients – I used an immersion blender, but any blender should work fine.

    • Thanks for the comment – you can get herbs de Provence at most grocery stores in the spice section. But! before you make the trip, you may already have the ingredients in your spice cabinate – most mixes include: rosemary, fennel, basil, thyme, and lavender.
